A blessing that Campo alla Sughera has chosen to honor in every stage of winemaking: a strict selection of the grapes, no forcing exerted during vinification, regular tastings and the silent wait during refinement.
Each plot is vinified separately, based on the ripeness of the grapes, so that it can express its personal perfection which will then be blended into wines capable of revealing the extraordinary expressive range of these lands.
QUALITY IS SELECTIVE AND CAMPO ALLA SUGHERA HAS CHOSEN NOT TO MAKE DISCOUNTS.
The grapes undergo triple selection: in the vineyard, on the sorting table at the entrance to the cellar and during de-stemming, thanks to a machinery dedicated to detaching the less ripe grapes. The fruits arrive in the tank still intact and perfectly healthy and proceed with their transformation into must and then into wine without ever undergoing mechanically induced stress.
Each stage takes place by the force of gravity through tanks running over the different floors of the cellar, whose vinification and aging rooms have been positioned underground.
Aging in wood does not follow established protocols or rules, the characteristics of each wine and the season are the ones to determine the time to be spent in the casks, whose wood has been selected to ensure maximum varietal expressiveness.

Aside from winemaking, we have also started small artisanal productions of Grappa and Extra Virgin Olive Oil Igp Toscano, both made with utmost care and pursuing the same perfection that we devote to our wines
